Our Flight Spotlight series is dedicated to capturing these stories, showcasing how expertly curated expressions create a cohesive tasting experience. In this edition, we turn our focus to The Last Refuge—a one-of-a-kind venue in Louisville’s NuLu neighborhood that blends whiskey, art, and music into an unforgettable experience. This curated Heaven’s Door whiskey flight exemplifies the brand’s craftsmanship, blending techniques, and innovative finishing processes.
The Last Refuge is more than just a whiskey bar—it’s a celebration of creativity. Housed in a meticulously restored historic church built in 1879, the venue is rich with character, from its intricate stained glass windows to its Renaissance-inspired ceiling murals. Upon entering, guests are greeted by a striking black-and-white portrait of Bob Dylan, setting the tone for the artistic and musical legacy infused throughout the space.
The venue also serves as a brand home for Heaven’s Door Spirits, the whiskey company co-created by Dylan. With rows of bottles soaring to the ceiling in an illuminated display, the bar showcases an ever-expanding collection of American whiskey. Heaven’s Door CEO Marc Bushala envisions this becoming the world’s largest American whiskey collection, and The Last Refuge is already bringing that vision to life.
The Heaven’s Door whiskey flight we spotlighted at The Last Refuge was designed to take tasters on a journey through sourcing, blending, and finishing. Each expression highlights a unique element of the brand’s approach to craftsmanship:
Revival: A Tennessee straight bourbon aged for at least five years. Its smooth, classic bourbon notes and rich depth of flavor represent the importance of patience and tradition in the whiskey-making process.
Ascension: A 92-proof blend of Kentucky straight bourbon whiskeys, offering aromas of baked bread and dried fruit, followed by flavors of caramel, cinnamon, and nutmeg. This expression demonstrates how blending creates a layered and dynamic tasting experience.
Revelation: A bold 100-proof blend, aged an additional 6 to 12 months in custom-made Tonnellerie Radoux barrels. The secondary aging process enhances complexity and richness, underscoring the impact of innovative wood programs in whiskey maturation.
Refuge: A 92-proof rye whiskey, finished for no less than six months in sherry casks. This finishing process adds sweet, fruity, and rich flavors, highlighting how barrel finishing can transform rye whiskey into something truly unique.
